In the sweet hills of Chianti Classico lies the tiny medieval village of Passignano, where riders used to stop in ther Middle Ages to refresh and rest on the way to Rome. The name of the restaurant says much about its origins: it was once a stable where the riders stopped to rest and change horses before continuing along the street called the Gardingo of Passignano.
